From Asheville to Austin, it seems like every bar these days is offering a salad in a glass. “It started right alongside the general culinary shift of people wanting fresh, unprocessed foods and to understand where their meal came from,” says Brandon Lockman, lead bartender at Portland, Oregon’s Red Star Tavern, where you can order a Shen Nong’s Elixir made with Jasmine tea. “Kombuchas, drinking vinegars, herbal teas, and other healthyish cocktail fixings that wouldn't have sold five years ago go like crazy now,” Lockman says.

Red Star Tavern got a great new chef last fall as Dolan Lane took over after his long stint at Meriwether. The new menu is reflected in the updated happy hour menu, which is served 4 to 7 p.m. every day. New items such as the preserved pepper glazed wings with feta cream and dill ($6) and the gravy and fries with pork sausage and cheese curds ($6) join existing items like the Red Star carnitas tacos ($3). Well spirits, draft beer, and house wine by the glass run $5, or you can get fancy with $6 house martinis and manhattans and signature cocktails for $7.
