Executive Chef Tom Dunklin takes full advantage of a wealth of local and regional ingredients as he and his team orchestrate the workings of Red Star's aromatic wood-fired brick oven, rotisserie, smoker and a sizzling grill, all of which are visible in the open kitchen of our 200 seat restaurant. Dishes like our Alaskan Halibut with Eggplant Puree, Meyer Lemon Gelee and Fried Capers or hearty fare like our Dry Aged New York Strip, Rogue River Blue Cheese Soufflé and House Made Worcestershire reflect the culinary riches found in the nearby coast and waterways, the close proximity to Oregon's wine country and the nearby farms. Desserts and breads at Red Star celebrate the tradition of culinary great James Beard, the Portland native who reveled in baking with local berries, pears, apples, apricots and other luscious fruits. The results are indulgences like Washington Apple Panna Cotta with House Made Cider Cotton Candy or the Flourless Chocolate Cake with Root Beer Float and Cashew Ice Cream
